The temperature sensors you linked to are made to run on 12 VDC, yet you say you powered them off of the compressors. Do the compressors for the refrigerator/freezers run on 12 VDC or 24 VDC? Not on the boat to look at the manuals, but it seems to me their circuit breakers are on the 24 VDC panel.
