Good question. Are they essential? Probably not. They do not add a lot to the total air flow through the boat. But in s buggy anchorage when cooking I'd miss the air if I had to keep the galley port closed. And in rain, sometimes the ports opening under the cover of the cockpit canvas are the only ones that can be opened.
