We had our sensors changed in Martinique. As with everything on an Amel, what may look daunting turned out to be straightforward.
Disconnect the inboard end of the cables. Undo all the cable ties that secure the cables inside the hull.
Pull the sensors out -- from memory, you may need to tap in a screw to the sensor to give you some purchase, then work the sensor out by rotating it gently while pulling. Ours came out easily.
Don't pull the whole cable out -- you will need the old cables as messenger lines for the new cables.
Having pulled out a foot or so, cut the sensor off and solder the old and new cables end to end. Make absolutely sure that the connection is secure. Then get someone inside the boat to gently pull the new cables into the boat.
From memory the sensors fit snugly in place. I think the guy who did the job may only have used grease to seal them rather than a mastic.
