I'll definitely second what Pat has said here.  

Removing the thermostat should only ever VERY short term fix to limp home because the thermostat is stuck closed.  Running a diesel without a thermostat will cause serious damage from an operating temperature that is much too low. 

Removing a thermostat to fix an undiagnosed cause of overheating would be a very dangerous thing to do.
