Have you seen the Lugun table bracket. We have one on our Mango. They are brilliant, and can be easily removed or just swivelled out of the way.

I attached the link with some schemes and especially photos of the folding table of the Tortola.
I guess and I hope it's clear enough.
The only important thing to know is that the seat should be advanced a little forward (in the Tórtola 3 cm has been enough) in order to leave enough space for the two tabletops between the seat and the top of the machine room when it opens.
