Although Bill correctly points out the expansion tank takes care of the increased pressure, it may be helpful for you to know how it does that so you understand that it's not extra water

Bill- thanks as always for the great info. So this tank is just an 8 liter reservoir for my basic 40 ? Does it only allow ingress under some kind of pressure ? If not it merely expands my basic 40

On your SM the hot water pressure accumulator tank was originally located between the water heater and the port side of the engine room.
Unfortunately, I have seen some owners remove this tank

Tom has identified his problem - no expansion tank, but I think this topic started with Mawgan's problem of no hot water flowing after he installed a new tank.

On a brand new water heater they have a plastic plug in the connections. This may have been pushed into the connection. This can happen in transit.

You should have an accumulator tank installed in the hot water circuit near the water heater. This will accommodate the increase pressure when the main engine reaches an operating temperature

On my basic 40 the pressure relief valve is constantly tripping (especially when water is heated by running engine). Also the sealing o-ring can deform and block part of the flow. I'd check those

You didn't say, but the obvious would be that you mixed up the connections between the engine and the the water system. This is easy to do, especially because the orientation of these connection
