You can probably pick up the hose in any hydraulic shop. I use a hydraulic hose rated at 5,000 psi.

I totally agree. Once you had GN Espace, I doubt if you will ever go back to anything else. GN Espace is a Yacht School Preferred Vendor.

When we refitted Eleuthera, SM007, we went for Ocean Chef 3.(OC3) This is the cooker installed on Oysters.
Advantages:

The brand of panel is SunPower and yes, 680 watts total.
I located the panels that way to minimize curving and to leave some space for the possible addition of 2
